Salsa de Molcajete



Prep Time: 5 minutes

Cook Time: 20 minutes

Total Time: 25 minutes

Servings: 1.5 cups




Ingredients

  • 2 roma tomatoes
  • 2 serrano peppers 
  • 2 anaheim peppers
  • 1 fresno pepper
  • 3 to 4 habanero peppers
  • 2 cloves of garlic
  • 1 teaspoon salt (plus more as needed)

Preparation

  • Heat a griddle or cast iron pan to high heat.

  • Place all the ingredients and roast until they become soft and slightly blackened (about 10 minutes).

  • Flip tomatoes, peppers and garlic and continue to char for another 10 minutes or so. (The garlic will be done before the rest of the ingredients, simply remove and set aside).

  • To start grinding ingredients in molcajete, place the 1 teaspoon of salt & garlic and grind down until you make a paste.

  • Add the peppers one by one until you have the desired consistency.

  • Add the tomatoes one by one and keep grinding.

  • Season to taste and serve.
