On one of Luisa’s visits to Oaxaca she met a mother and son duo who made some of the best Oaxacan mole she has ever had. Luisa’s experience with Mimi and her son, Charlie, became one her most cherished memories and she wants all of the Mexico in My Pocket community to have the same opportunity. As Luisa said “going to Mimi’s house felt like visiting family” and she can’t wait to go back to Oaxaca and have a traditional meal with her new “family.”
About Mimi: Mimi is proud to be Oaxacan and enjoys sharing her culture with the world. She will welcome you into her home with open arms and tell you "mi casa es tu casa."
Her mother-in-law taught her the recipes she'll prepare during class, which have been passed down more than four generations.
In 2019, she participated in a traditional cooks of Oaxaca contest, where she won second place for her pipián de nopales dish. Her specialties include barbecue cooked in a stone oven, black mole for Day of the Dead, and tamales with maguey worms.
She's also in charge of managing a Oaxacan fresh cheese business, which has been active for more than 25 years.
About the Cooking Class: Mimi uses fresh organic ingredients for every class and will teach you about the fundamental and traditional ingredients that every Oaxaca dish needs.
Students will get to taste grasshoppers, Oaxacan quesillo, mezcal, chocolate, and other traditional types of Oaxacan ingredients and food.
Oaxaca is famous for having 7 types of mole: rojo, coloradito, amarillo, verde, negro, chichilo, and manchamantel. Before class, you will choose your favorite style of mole, and you will learn how to make it. Mimi will also teach you to differentiate between each mole's textures, aromas, and flavors. *Note: Mimi will help you tailor your cooking to your dietary restrictions as needed.
You will be involved in step-by-step mole making process and will also learn how to make tortillas by hand and how to properly heat them on the comal.
After, everyone will sit down at the table and eat family style.
For dessert, you will savor something sweet from the local town. We will also keep dietary restrictions in mind when necessary.
