Ricardo Bremer is a Mexican culinary and pastry artist currently living in Brooklyn, New York.
Currently Bremer is experimenting with different ingredients that are commonly used in Mexican and Mediterranean cuisine. While thinking outside the "chocolate" box he adds exceptional flavors to the already usual chocolate we are all used to.
Mole Negro: A mild spicy blend of three Mexican chilis with smoky earthy notes, mixed with toasted spices, seeds, nuts and more. This mole was first created by the ancient Mexican civilizations from Oaxaca. The black mole is the mole for the death and it’s celebrated and eaten widely on the Day of the Dead.
