Gorditas are one of my favorite things to eat for breakfast in Mexico, my Mum and Dad would get them early in the morning during the weekend (because you have to get there early when you want to get the good ones ☺️️), we would have fresh fruit with freshly made juice and our gorditas, finish with a cup of coffee ☕️ and a newspaper! ❤️ One perfect Sunday

7. Crispy Quesadillas with Roasted Cauliflower

Having a quesadilla kind of Monday!
Because crispy quesadillas with roasted cauliflower (with dukah, sesame seeds, ground pasilla, olive oil, salt and pepper) and melted cheddar cheese are so good and quick to make! I served mine with a yummy Adobo Chipotle crema made with Chipotles en Adobo.
