Pibil-Tofu Tacos

Pibil-Tofu Tacos

What you need:

  • 1 package firm tofu 
  • 3 tbsp achiote paste 
  • 4 tbsp water
  • Salt and black pepper (freshly ground) to taste

For the pickle onion:

  • 1 medium red onion
  • 4 limes
  • 1 habanero chile finely chopped
  • 1 tbsp white vinegar
  • 2 tsp sea salt 

How to prepare:

  1.  Cut the tofu in small squares, sprinkle salt on them and place them in a sieve for a few minutes so they can drain some extra liquid.
  2. In a bowl, dissolve the paste of achiote with water, add the tofu and mix well with care. Add salt and pepper to taste. Heat a skillet on high heat. Add a little oil and the achiote tofu. Cook for five minutes, moving occasionally. 
  3. Store in a glass jar in the fridge. 

How to pickle the onion:

  1. In a small pan, put two cups of water to boil. Meanwhile, cut the onion in slivers.
  2. Put the onion in a bowl and pour the hot water on top. Let it soak for 10 minutes. 
  3. Drain the water off. Add the lime juice, habanero chile chopped finely, the vinegar and the salt. Let it rest for two hours, and it's ready.
  4. Store in a glass jar in the fridge.
